Reverse Sear Smoked London Broil Recipe
Smoked London Broil Cook Temp: 225 – Sear at 550+

Final Temp: 130 degrees – cook to whatever temp you prefer your red meat.

Preparation:
1st thing to do – turn on the grill to 225 degrees. We will be cooking this with indirect heat.
This means – we are not cooking this directly on the grill.
On a Komodo grill, like the big green egg, you will put in a ceramic place setter to create the indirect cooking atmosphere.
If you have a weber or propane grill – you can still bbq a London broil and cook indirect. What you will do is turn 1 of the burners on and leave the others off. See if you can get the temp to 225. If you need to – turn an additional burner on to get the correct temp.
If you are using a regular grill – it’s very important to make sure you do not put the London broil over the burner that you turned on. What we are doing is creating heat on one side of the grill and we will be putting the meat on the other side of the grill.
I make a pretty simple rub for my smoked London broil.
I put (1) part course Kosher salt to (1) part #16 Course pepper and (1/2) part Paprika and (1/2) part garlic salt.
Mix the rub.
If needed – you can put some olive oil onto the London Broil to get the rub to stick.
Evenly put the rub onto the meat. Make sure you look at which way the grain of the meat is – so you can cut against the meat when it’s done.
Reverse searing a steak is when you cook your steak at a low temperature (low and slow) until the internal temperature is about 15 degrees under your desired temp. You then pull the meat from your smoker and heat the grill to sear the steak. You will sear the outside until your steak reaches your desired temp. Reverse searing steaks, especially thicker steaks are very tender and juicy.
Place your meat onto the grill and close the lid.
You will want to cook your smoked London broil for roughly 60 minutes until the internal temp is 115 degrees.
Pull the smoked London broil at 115 and cover on a plate.
Kick the grill up to 550+ degrees
Once the grill is 550+, sear the bbq London broil until it’s 130 degrees
Pull from the grill, cover in foil and let rest for 10-20 minutes.
