Smoked Prime Rib Cook Time: Roughly 3-5 hours cooking 1 hour prep
Final Temp: 130-135 degrees – depends how you like your smoked rib roast

Rub:
¼ cup salt
¼ pepper
¼ cup garlic powder
Mix together in shaker or bowl.
Night before: pull out your prime rib roast, trim the fat and rub olive oil over the entire prime rib. Evenly shake your mix of salt, pepper and garlic over the entire piece.
Day of Cook:
The first thing we want to do – light your grill to 225 degrees & we want to cook indirect.
This means – we are not cooking the prime rib meat directly on the grill.
On a Komodo grill, like the big green egg, you will put in a ceramic place setter to create the indirect cooking atmosphere.
My timeline for this cook:
10:00 – Light grill
11:30 – added oak wood chunks
11:40 – put prime rib onto grill – meat temp 40 degrees
12:35 – internal temp 52 degrees
1:30 – internal temp 81 degrees
2:30 – internal temp 111 degrees
2:47 – Pulled at 118 degrees
After the meat his temp – I wrap in aluminum foil, wrap in a towel and place in a cooler.
Next – kick your grill temp up to 550 degrees.
Sear your prime rib meat for 3 minutes per side.
After you are done searing – wrap again in aluminum foil for 10-20 minutes to let it rest. Here is what mine looked like after the rest.
