Leftover Pulled Pork Recipes – Chimichangas

Instructions:
When you make pulled pork – if you’re like me – you have a ton of leftovers.
Here is a really easy recipe that is delicious for your pulled pork leftovers
First – heat your pulled pork. I use a Sous Vide to heat mine since I have them frozen in a vac sealed bag.
While your pulled pork is heating up, put some vegetable oil in your pan and put it on your stove on high.
Once your vegetable oil is hot and ready to go – take your pulled pork and beans and wrap them in the tortilla.
Next – place the wrapped pulled pork into the oil with the folded side down.
Let it sit here for 2-3 minutes, until it starts browning.
Next – flip it and do the same – leave it for 2-3 minutes until your pulled pork chimichanga is browned.
Once it’s browned – pull it and put it on a plate with paper towels underneath the chimichanga. The paper towels are very important because they absorb all of the oil.
