8AM: Pulled out pork belly and started trimming the skin off. I had a 10 lb pork belly. Surprisingly, it took an hour to get it all trimmed. Make sure to leave time in the future to trim the skin.

9 AM: started the smoker and set to 250
Cut the pork belly into 1”-1.5” cubes
Place the cubes on the extra grates and make sure they are spaced out so that the smoke can get all sizes.
Season with your favorite BBQ rub
10:45 AM: Put your pork belly cubes on the smoker.
1 PM: Pull from smoker and take a taste. Should taste awesome!
Pull the cubes and put them in an aluminum foil tray.
Add Honey, Brown Sugar, 1.5 sticks of butter and some BBQ sauce.
Cover and put on smoker for an additional 2 hours.
3 PM: Remove the cover on the aluminum pan and let them cook for an additional hour.
4 PM Done: Open them up, eat and enjoy!
