Preferably the night before your cook (no big deal if it’s the same day) put your pork tenderloin in a Ziploc and add these ingredients to the bag:
Mix these all in the bag and leave your pork tenderloin sit in the refrigerator.
Instructions and Timeline:
The day of, light your smoker and heat to 250 degrees – indirect heat.
Put your pork tenderloin onto the grill when it hits 250 degrees.
Smoke your pork tenderloin until it has an internal temperature of 145 degrees. (these were small and cooked quick – about an hour. Judge by internal temp not time.)
I did not sear the bbq pork tenderloin this time, I think in the future – I may smoke and pull at 135 degrees and sear the outside for about 1-2 min per side.
