Easy Peasy Smoked Pulled Pork Recipe

I make a very simple rub for my smoked pulled pork.
Take ¼ cup salt and ¼ cup pepper and mix them in a bowl. Next add 1/8 cup garlic and 1/8 cup Paprika and mix. You might have some left over – save it for next time.
Heat your smoker to 275 degrees and put your wood on.
Pull the pork butt out of the paper and rinse with cold water.
Rub Mustard on the pork butt – not a ton of mustard – just to get the rub to stick.
Evenly apply the rub onto the pork butts. It should look similar to this.
Put the butt on the smoker with the fat side up.
• Side note – I generally don’t trim any fat off of the butt before it goes on. I pull the fat at the end. You will loose some rub doing it this way, but I found the meat is more moist if you leave the fat on during the cook.
Put the pork butt on the grill and cook until roughly 202 degrees.
Recommend doing the tooth pick test to confirm your smoked pulled pork is done.
Tooth Pick Test: Put a toothpick into the meat and pull it out. We want it to feel like we are probing butter with very little pull. Generally this is achieved around 202-204 degrees. This is how you can tell when your smoked pulled pork is ready to pull and will be super tender.
When you hit temp, pull your pork butt from the grill and wrap in foil.
Wrap the foiled smoked pork in a bath towel and put into a cooler for 60 min.
• Make sure to put the butt in the cooler with the foil opening up. Ie. Where you sealed it. If not – you will loose all of the juice.
After 60 min – pull the smoked pork out of the cooler and pull the bone out.
Put the smoked pork into a large bowl and pull the pork apart with 2 forks or bear claws.
Make sure to pour the juices from the aluminum foil back over the smoked pulled pork after you pull it.
I allot ¾ lb of uncooked pulled pork per person if I’m having a party. This allows for the shrinkage in the meat. You will want to take account the type of guest you will have. Are you having kids friends over for a party or grown adults. Usually ¾ lb of bbq smoked pulled pork per person is a pretty safe bet for an average adult.
