I got this Duck from Meat Artisan. I haven’t tried much else from them yet, but I have to say – this duck was awesome!
Heat your grill to 250 degrees. We will be cooking this indirect – so make sure you put in your plate setter.
Remove the duck from the packaging rinse and dry.
Evenly apply the Dizzy Pig Peking Duck rub to the duck. You can use any type of Peking duck rub – this is just the one I used. I believe this duck would also be good with light salt and pepper + a mix of 2 part honey to 1 part Kikkoman soy sauce.
Place the duck breast onto the grill and let it go to until the duck’s internal temperature is 155 degrees. I like putting the fat side down.
Once the duck breast hits 155 degrees, pull it and put on a plate – tent it with aluminum foil. It should look similar to this.
Next – remove your place setter on the grill and kick the temp up to 550 degrees so you can sear the duck breasts.
I sear it for 2 minutes per side.
Pull the meat off, let rest for 5-10 minutes.
Slice the Breasts.
Making the Wrap:
Put your pancake flat on your plate, spread the hoisin sauce on the pancake with your spoon (note – the pic below has the hoisin on top – I prefer it placed first on the pancake), place the duck, onions and cucumber on top and enjoy.
