I love smoking a turkey on the grill. A smoked turkey, especially a spatchcock turkey will give you a juicy meal that you and your guests will love!
Cook Temp: 350
Cook time: 2 hours
Final BBQ Turkey Temp: 165 to the breast
Accessories Needed:
Clean and rinse the turkey with water
Get a pair of strong scissors (I use Kutco) and cut the spine from the bird.
To spatchcock a turkey – You will make 2 cuts – one on the right side and one on the left.
Once you have the spine removed, flip the bird and push on the breast to break the chest bone. You’ll hear a crack. The bird should sit flat once this is done. This does take some pressure to accomplish, so don’t be shy.
Evenly apply your rub to the bird.
30 minutes before you put the bird on the grill – fill a gallon Ziplock back with ice and place it on the breast of the bird. Let this sit for 30 minutes.
The leg meat cooks quicker on a bird – so I do this to try cool the breast meat so it cooks closer in line with the leg meat.
Heat your grill to 350 degrees. We want to cook Indirect – so put in your place setter.
Place the turkey on the grill until the breast reads 165 degrees. In roughly 2 hours you should have a perfectly smoked turkey.
Pull your smoked spatchcock turkey and tent in foil for 10-15 minutes before slicing.
Take the foil off your smoked turkey, slice your bird and enjoy!
